So many times I have boiled up a batch of hard-boiled eggs, only to find that once peeled they had a very distinct green ring around the yolks. Yuck! The trick is not to over cook them. Easier said than done, right? Wrong!
Follow these steps to perfect eggs, every time!
1. Place as many eggs as needed in a saucepan.
2. Fill with COLD water.
3. Bring to a boil.
4. Once the eggs reach a boil, place a lid on the pot and turn OFF the heat.
5. Let sit for 10 minutes.
6. Run under cold water and remove shells. The result? Perfectly cooked hard-boiled eggs!
Hints: Older eggs are easier to peel than fresher eggs. This is because fresher eggs are more acidic and as they get older, the egg white shrinks and the air sac becomes larger. Interesting!
