This dip is one of my family favorites – it’s a perfect blend of creamy cheese, garlic and spinach. You can add just about any other vegetable to this – chopped artichokes, roasted red peppers, even water chestnuts work here. Bacon is another delicious option. I’ve used toasted baguette slices, tortilla chips, cubed fresh bread – as well as cut up vegetables to dip. I have also used this to stuff tomatoes, mini tart shells, mushrooms and even chicken breasts. It’s very versatile!
Four Cheese Baked Spinach Dip
8 ounces cream cheese, room temperature
1/4 cup romano cheese, grated
2 cups shredded mozzarella cheese
4 ounces crumbled feta cheese
1 small tomato, seeded and diced
1 small onion, diced
3 cloves garlic, minced
1 box frozen chopped spinach, thawed and drained well
1 teaspoon salt
1/2 teaspoon ground black pepper
In a large bowl, mix all ingredients together. Place in hollowed bread bowl, cover with foil and bake at 350 degrees for 45 minutes – until cheese is melted and heated through. You can also bake in a baking dish, but reduce cooking time to 25 minutes.

This looks wonderful! Sometimes I make a hot red kidney bean dip as well as a baked beetroot, creme fraiche and garlic dip which is beautiful served hot with crusty bread.
